• Description:

    Get your toddler involved with this fun recipe, and feed them a healthy treat without the fuss! Makes 12 – 16 meatballs.

  • Ingredients:

    500g lean or extra lean beef
    2 egg whites

    1½ cups cooked vegetables (This is a great way to use up leftover vegetables.)

    1 slice low-GI bread
    1 tbsp. basil (Preferably fresh)
    Extra virgin olive oil

  • Method:

    1. Preheat oven to 200 °C.
    2. Use the fine setting to blend the vegetables along with the bread in a food processor.
    3. Add the blended mixture to the beef.
    4. In a separate bowl, whisk the egg whites.
    5. Add to the main bowl along with the basil and any other spices.
    6. Mix the ingredients by hand to ensure an even dispersion of veggies.
    7. Prepare a baking tray with wax paper or alternatively with cooking spray.
    8. ‘Oil’ your fingers with a bit of olive oil
    9. Roll out the meatballs into small-medium sized balls (About 4 cm in diameter.)
    10. Place the meatballs onto the baking tray and bake for 20 minutes or until they’re brown in colour.
