• Description:

    A darkly decadent cake that will brighten any celebration.

  • Ingredients:

    For the cake:
    1 cup water
    125 g butter; softened and cubed
    1/3 cup cocoa
    2 tsp. instant coffee powder
    2 cups flour

    1 tsp. bicarbonate of soda
    ½ tsp. salt
    2 cups caster sugar
    2 eggs; at room temperature
    ½ cup buttermilk
    1 tsp. vanilla extract

    For the dark chocolate ganache glaze:
    150 g dark chocolate
    150 ml cream
    ½ cup icing sugar

  • Method:

    1. Preheat oven to 160 °C.
    2. Grease a bundt pan well.
    3. Place the water, butter, cocoa & coffee in a saucepan, and stir over medium heat until the butter has melted & then set aside.
    4. Sift the flour, bicarbonate and salt together and stir in the sugar.
    5. Add the butter mixture to the flour and whisk until combined.
    6. Add the eggs, buttermilk and vanilla and whisk until well combined.
    7. Pour into the bundt pan and bake for about 45 min. or until a skewer inserted into the cake comes out clean.
    8. Allow the cake to cool in the tin for 15 min. and then carefully turn out on a wire rack to cool completely.
    9. To make the dark chocolate ganache glaze, place the chocolate & cream in a small saucepan over low heat. Stir until melted & smooth.
    10. Sift the icing sugar over the mixture and mix well.
    11. Add more icing sugar if the glaze is too thin. When you have a thick pouring consistency, gently spoon over the cake to slowly run over the sides.
