DESCRIPTION:

INGREDIENTS:

500g prawns/shrimp, peeled and deveined
250g calamari
250g half-shell mussels
1 onion, finely chopped
4 garlic cloves, crushed
400g chopped tomatoes
1 tsp. smoked paprika
2 cups shortgrain rice
4 cups chicken/fish stock
2 tsp. salt
1 tsp. pepper
Lemon wedges, for serving
Chopped parsley, for serving

METHOD:

  1. Peel and devein your prawns or shrimp to ensure they are fully cleaned before cooking. Use paper towels to pat them dry, and do the same for your calamari.
  2. Place a large, deep pan (approximately 30cm) on the stove over a high heat. Drizzle the calamari and shrimp with olive oil, season them with salt then sear them in the hot pan until they start to develop a little colour. Make sure not to cook them all the way through. Once the seafood has started to colour, remove it from the pan and set aside. 
  3. In the same pan, add more olive oil and cook the onion and garlic until translucent and fragrant. Add the tomatoes and cook for a few minutes until most of the liquid has evaporated.
  4. Pour in the rice and smoked paprika and stir to combine. Season with salt and pepper.
  5. Pour in the stock then reduce the heat, partially cover, and allow to simmer for 7 to 10 minutes or until most of the liquid has been absorbed and the rice is almost cooked.
  6. Tuck all the seafood into the rice mixture, while leaving the bottom layer of the rice intact. Cover the pan again, then cook for another 5 to 7 minutes until the seafood and rice are fully cooked. 
  7. Season to taste and serve with lemon wedges and chopped parsley.
