DESCRIPTION:

These mouthwatering pork chops are the perfect combination of sweet and savoury, guaranteed to have everyone begging for more!

INGREDIENTS:

4-6 pork chops
½ cup fresh orange juice
2 tbsp. orange jam
1 tbsp. wholegrain mustard
2 tbsp. oil
2 rosemary sprigs
1 medium red onion, cut into wedges
2 tbsp. fresh lime juice
Salt and pepper, to taste

METHOD:

  1. To make your fresh, zesty citrus sauce, combine the orange juice, jam and mustard in a saucepan and set it on a medium-high heat.
  2. Bring the sauce to a boil, then reduce the heat and simmer for 15 minutes, or until the sauce is wonderfully syrupy.
  3. Heat a large ovenproof skillet over medium-high heat and add oil to it, swirling to coat. 
  4. Sprinkle your pork chops with a generous seasoning of salt and pepper and add them to your skillet. 
  5. Cook your pork chops for 5 minutes, or until browned. Then turn your pork chops over and add the rosemary and onion to the skillet. 
  6. Now add your juice mixture to the skillet, and bake your pork chops for 10 minutes at 180°, or until a thermometer registers 180°. 
  7. Take the onion and rosemary out of the skillet and place on a serving platter. Return your skillet to medium-high heat and add the lime juice to finish.
  8. Cook for a final 4 minutes or until the liquid is glossy and syrupy.
  9. Place the pork chops on top of the rosemary and onion on the platter, drizzle with a generous helping of sauce, and serve with sides of your choice.
