DESCRIPTION:

Sea bream is a delicate white fish that is best cooked simply like in this Mediterranean-style one-pot. Get all your ingredients at Shoprite.

INGREDIENTS:

4 large potatoes

2 garlic cloves, finely chopped

Pinch dried chilli flakes

Pinch saffron

1 bunch coriander, roughly chopped

4 whole sea breams cleaned and gutted

1 tbsp olive oil, plus extra for greasing

2 limes, juiced

125ml white wine

Handful sundried tomatoes

Handful pine nuts, toasted

4 thin slices pancetta or smoked streaky bacon

METHOD:

  1. Heat the oven to 200C. 
  2. Slice the potatoes thinly, put in a large saucepan and cover with cold, salted water. 
  3. Lay onto the bottom of a large, lightly oiled baking dish after bringing to a boil and draining. 
  4. Sprinkle the garlic, chili, saffron, and a small amount of the coriander on top.
  5. Slash the fish through the flesh all the way to the bone so that it cooks quickly and evenly. 
  6. Apply seasoning and olive oil for rubbing. 
  7. Place the fish on top of the potatoes and garnish with the tomatoes, pine nuts, wine, and lime juice. 
  8. Once the fish is covered with pancetta pieces and cooked through, bake for 20 to 25 minutes. One of the back fins can be pulled out to check; it should come away easily. 
  9. Serve the fish with the remaining coriander.
